Chocolate Chip Banana Bread Bites

At my old office (pre-COVID) we would always have leftover bananas and I would often take them home to make banana bread for my colleagues.

Although a loaf is probably the most common way banana bread is made I actually really like this recipe because I feel like it bakes a bit more even and tastes more cake-like. Plus the addition of sugar baked on top gives it a little extra crunch.

Chocolate Chip Banana Bread Bites

Serves 16

Ingredients:

  • Nonstick cooking spray, oil, or butter

  • 8 Tablespoons (1 stick) unsalted butter, melted and cooled

  • 1 cup light brown sugar, packed

  • 2 large eggs, beatened

  • 1 1/2 teaspoon vanilla extract

  • 4 or 5 very ripe bananas, mashed

  • 1 3/4 cups all-purpose flour

  • 1 teaspoon baking soda

  • 3/4 teaspoons kosher salt

  • 1/2 cup mini semi-sweet chocolate chips

  • 1 Tablespoon white granulated sugar

Directions:

  1. Place a wire rack in the center of the oven and preheat to 350°F.

  2. Grease an 8 x 8 inch baking pan with nonstick cooking spray, oil, or butter. Then lightly sprinkle all-purpose flour inside and shake out the excess.

  3. In a large bowl, beat together the melted butter, light brown sugar, eggs, and vanilla extract until well blended. (To melt the butter, I like to put it in the microwave 20-30 seconds)

  4. Add the mashed bananas and mix until well combined.

  5. In a medium bowl, sift in the flour, baking soda, and salt. Then mix well with a whisk.

  6. Add the dry ingredients to the wet ingredients and mix until just combined. There should be no streaks of flour visible.

  7. Add in the mini chocolate chips and using a wooden spoon mix until just combined.

  8. Pour the batter into the prepared baking pan and make sure it’s spread evenly.

  9. Generously sprinkle the white granulated sugar all over the top of the batter.

  10. Place the pan into the oven and bake for about 45-50 minutes. Test it by inserting a cake tester or a toothpick into the center of the pan. If it comes out clean, it’s done!

  11. Place the pan on top of a wire rack and allow it to cool for 10-15 minutes.

  12. When the pan is cool enough to touch and handle, remove from the pan, and cut into 16 squares.

  13. Enjoy!
