Quick Fix
Just a heads up, I ended up with all the leftover cheese from our viewing party so there might be a lot of cheesy recipes in the near future.
Both my brother and I have been craving Mexican food like crazy lately. Instead of stopping by the local taco joint I whipped him up a BBQ chicken quesadilla. This is a super quick and easy recipe that's pretty self-explanatory, but I've still included it below. One modification I would make is to mix the chicken and BBQ sauce in a separate bowl prior to adding it into the quesadilla. That way you would have BBQ sauce in every bite.
BBQ Chicken Quesadilla
Makes 1 quesadilla
Ingredients:
1 whole wheat tortilla
1 cup soft cheese, shredded (I used leftover Double Cream Gouda)
1/2 cup grilled chicken, cubed
1-2 T BBQ sauce (I used Sweet Baby Ray's Honey Chipotle)
Directions:
In a large frying pan on low heat, warm tortilla on both sides.
On half of the tortilla add half of the cheese, then chicken, then BBQ sauce.
Top off with the remaining amount of cheese and fold in half.
Continue cooking until the bottom has browned. Flip and repeat on the other side.
