Chocolate Banana Heaven

If there's one fruit that you'll always find at our house, it's bananas. We often buy so many that my brother and I tend to get a little sick of them. Never one to let things go to waste and suffering from baking withdrawals  I grabbed the overripe bananas and my loaf pan and decided to make chocolate chip banana bread. I couldn't find an exact recipe I liked online so I used this one from the Food Network and added in chocolate chips.

Chocolate Chip Banana Bread

Makes 1 loaf (9 x 5 x 3)

Ingredients:

  • 1 cup granulated sugar

  • 1 stick (8 T) unsalted butter, room temperature, cubed

  • 2 eggs

  • 3 ripe bananas

  • 1 T milk

  • 1 tsp ground cinnamon

  • 2 cups all-purpose flour

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1 tsp salt

  • 1 cup chocolate chips

Directions:

  1. Preheat the oven to 325°F.

  2. Butter the loaf pan. (I like to use the excess butter left on the wrapper.)

  3. Cream the sugar and butter in a large mixing bowl until light and fluffy.

  4. Add the eggs, one at a time, and beating well after each addition.

  5. In another bowl, mash the bananas with a fork.

  6. Mix in the milk and cinnamon – this makes it smell heavenly when baking.

  7. In another large mixing bowl, mix the flour, baking powder, baking soda, and salt.

  8. Add the banana mixture to the sugar and butter mixture and stir until well combined.

  9. Stir in the chocolate chips.

  10. Add the dry ingredients, 1 cup at a time, and mix well.

  11. Pour batter into pan and bake for 1 hour 10-15 minutes or when an inserted toothpick comes out clean for the center.

  12. Allow bread to cool for 15-20 minutes.

  13. Slice and serve with a sprinkle of powdered sugar. Enjoy!
